I do this every year at the same tree. It’s very simple and makes your coffee slightly SWEET and the taste is excellent. NOTE: If you already add a ton of sugar to your coffee, this won’t be that impressive.

How high is the sugar content in that? Does this break your fast? If I remember correctly I’ve heard you mention that you do OMAD.
What do you think about black walnut sap? It’s almost as sweet as maple & I’ve got a ton of them around the farm in E Tennessee.

Zack, it is not the change in temperature of the sap that makes it flow. It is the change in state from solid to liquid and back. Because water expands when frozen it creates increased pressure inside the tree and this causes the unfrozen sap to flow out of any opening it can find, like a convenient tap. Usually that unfrozen sap is found on the south, sun facing side of the tree. The sun facing side of the tree is the last to freeze and the first to thaw so you get sap flow while the tree is freezing and thawing. No flow when it is completely thawed or completely frozen. When does this happen? It used to be predictable but with our wonky climate changes due to the sun and the earth’s magnetic field (not you and not CO2, yea you know that)…heavy sap flow can occur at any time from late fall to early spring. These days we tend to be hotter or colder than normal in winter and this is due to the increasingly eccentric polar jet stream. So, when to tap? Tap your SUGAR maple right before the first hard freeze that lasts for more than 48 hours. That happened to us three times in January (Polar Vortex 1.0, 2.0 and 3.0)…and we could see it happen again before the trees flower. Remember, the tree tap hole will heal and seal if temperatures go much above 50 for more than a few days and you should only tap each tree once unless it is large (two to three feet diameter can tap twice and greater than three feet can be tapped three times).
You can kill a tree easily by doing this. Read up and do it right. There are many sources of information on how.

I tap black walnuts, I think that sap would taste good in coffee too. It’s a very light sweet nutty flavor, not at all like the bitter nuts.
Any Maple tree? i thought the only good ones to tap were sugar maples.
